Breaking Down With Sasha Sherman
“(was actually 10:34) I’ve been experimenting with a chestnut buckwheat porridge for breakfast using a coarse chestnut flour that our friends at Route 9 Cooperative mill. I topped it with pecans, an apple and pear sauce and some cream. The cream on top was a traditional way to serve a chestnut polenta in northern Italy. I also was trying out a fig and cheese danish from Supermoon Bakery. I think they could be an amazing collaborator next year.”
“ Stopped by Union Square Greenmarket to scoop chestnuts from our farm partner that is storing them for us upstate in their expansive refrigerator.”
“Dropped off chestnuts for our pastry chef Emma Scanlon and her team to prep into our Chestnog and incredible pastries. Every week we are using more and more chestnuts to keep up with the growing seasonal excitement.”
“Sometimes I get to sample the latest magic from kitchenmate and dear friend George of Lisbonata who was working on perfecting his pistachio pastel de nata today.”
“Stopped by Cafe Mado to drop off chestnuts for Chef Nico and Chef Daniel and an upcoming collaboration.”
“Is there anywhere better to grab a snack? Their sandwiches and Laurel Bakery’s pastries are revelations.”
“ Dropped off some gift boxes for our friends at RD Goods BK to sell and of course Ilene matched our gift box color palette to a T.”
“Whatever it is, the way you tell your story online can make all the difference.”
