Brad Holtzman, 35, Elmira, NY

What was growing up like for you and did you have family meals growing up?

My sister and I were raised by our single mom. Didn't matter what was going on, we prioritized sitting down for dinner with the three of us.

What are your earliest memories of dining out?

Pizza Hut lunch buffet, Friendly's chicken fingers, and Chinese Food. I remember when they let us make the pizza at pizza hut and it was the coolest thing ever.

 

Was there a definitive moment or person that drew you to the restaurant industry?

Julia, Jacques, and Emeril.

If you could give a piece of advice to someone who wanted to pursue your career, what would it be?

Thoroughly understand the commitment required to excel, solidify your support group, and work like you have no talent.

What do you think working in this industry during this time has taught you?

That feeding people is and always will be my passion in my life.

 

What's your favorite dish/drink on the menu?

Fuyu Cacio y Pepe but damn the whole menu brings it.

What is your number one place to go out and eat, what are you ordering?

Bernie's Clams, Wedge, Cheeseburger, and beg them to bring the onion rings back + Bourbon on the rocks. Mint chip sundae.
