What inspired you to work in the food industry?
Being broke! One of the things that is beautiful about the breadth of this industry is the barrier to entry is often low. Then you can take it and run with it in any direction. I loved the immediacy of service and the need for on-the-go problem solving.
What is your biggest customer pet peeve?
When you’re dropping food on a table, thoughtfully detail the dish (that they ordered) and then they go “wait what’s this?” Bruh…
What is your most blissful food moment?
Watching my daughter eat a chocolate ice cream cone with unparalleled focus.
What dish do you want to perfect in the kitchen?
I just want to chop garlic like Jacques Pepin. If I can do that, I don’t care what comes out on the other side.

My favorite food memories were eating tacos in Mexico City with my wife, so let’s say there.
How do you relax outside of work?
I try to get off my feet as much as I can but usually just spend down time with my family, and try to soak up the sun. Whatever is the opposite of being in a restaurant.
